These are some of my favorite recipes using ingredients from our farm.

 

Spicy Pickles

Ingredients

  • 3 pickling cucumbers
  • 1/4 cup white onion
  • 4 sprigs fresh dill
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 2 cloves crushed garlic
  • 11/2 tsp kosher salt
  • 1/4 cup sugar
  • 1/4 tsp whole black peppercorns
  • 1/4 tsp whole yellow mustard seeds
  • Pinch of crushed red pepper flakes

1. Pack a clean pint jar with sliced cucumbers, onion slices and dill.  Leave 1/2 inch of space at the top of jar for liquid.

2. In a saucepan, heat vinegar, water, garlic and all spices until simmering and salt and sugar dissolve. 

3.Cool brine to warm and fill jar to the top.

4. Close lid tightly and refrigerate for 24 before eating. 

Pickles will stay fresh for 14 days, if they last that long!  

 

Zucchini and Tomato with Eggs

Ingredients

  • 2 zucchini
  • 2 tomatoes
  • 3 eggs

Saute peeled and quartered zucchini in butter for 10 minutes. Add in chunks of tomato and let simmer for 5 more minutes.    Push mixture to sides of skillet, and break 3-4 eggs into center.  Cover and let finish cooking until eggs are done.  Season to taste. 

 

Cucumber Salad

Ingredients

  • 2 cucumbers
  • 1 red onion
  • 10 cherry tomatoes
  • Italian dressing

Slice cucumber, red onion and tomatoes.  Mix together with Italian dressing.  Refrigerate before serving.
